MEAT

In Lisbon, kosher meat can be found in the kosher section of El Corte Inglés supermarket (Supercor), prepared and ready to use. There are chicken, and sometimes sausages (turkey) and other chicken and turkey products.They don't have a regular stock and not all the products are always available.

BIRDS
Kosher birds are the domestic species of chickens, ducks, geese, turkeys and pigeons.
Birds or mammals must be killed in a specially prescribed manner. A trained practitioner severs the major vesels at the neck with a perfectly honed knife, in a painless procedure known as shechitah.

EGGS
The prohibition of eating blood applies even to the smallest drop of blood, and thus any blood spots found in an egg renders the egg non-kosher.
Each egg should be opened into a clear dish or glass and checked for blood spots before it is cooked or combined with other food. If a blood spot is found, the whole egg must be discarded, and the cup or dish should be immediately and thoroughly washed with cold water.
When boiling eggs, it is customary to boil at least three eggs at a time. Some people have a separate pot just for boiling eggs.
If a blood spot is found in a boiled egg, the whole egg must be discarded.

Information: Only those that chew their cud and have cloven hoofs. Beef, venison, mutton and chevon (goat) are examples of meat that make the cut. Cows, sheep, goats and deer are kosher, Be carefull, pigs, rabbits and other animails are not.
Blood isn't kosher. For this reason, kosher meat and poultry is salted and rinsed to rid it of all traces of blood. The Torah also forbids us to eat the sciatic nerve and certain fats. Because of the difficulty involved in removing the nerve and fats, kosher cuts from the animal's hindquarters are rarely found.

Q: How long will meat stay fresh in the refrigerator? The freezer?
A: Meat will last a few days in the fridge. If you have any doubts, smell it. A foul odor means it’s not good. In the freezer, meat can last for months. Just wrap it really well so there’s no air, and seal it.
Q: How can I tell if a chicken is fresh?
A: A good indicator is white skin color. If the meat under the skin looks faded, not pink, it’s not as fresh. Also, there shouldn’t be too much liquid in the bottom of the tray.
